I love good food but don't have much time for preparation... the recipes you'll find on this page are always simple, quick to prepare and use easy-to-find ingredients.

You asked for it....here are our three "most requested" recipes......

Ek' Tun's Ultimate Caye Lime Pie

Crust:

2 C crumbs of crisp, lemon shortbread or tea cookies (not graham crackers)

3 T light brown or raw sugar

6 T butter

1 t grated lime zest

Preheat oven to 375 degrees.  Place butter in 9" pie pan  in the oven for a few minutes while it is preheating to melt it.   Mix sugar into melted butter so it begins to dissolve. Add crumbs and grated lime zest.  Mix thoroughly and press with a fork to shape the crust.  Bake just until golden at the edges, about 5 minutes.  Cool thoroughly.

Tip: Place cookies in a gallon-size ziploc bag and crush with a rolling pin for fast, easy clean-up, then put finished pie in the ziploc to keep it from absorbing any freezer odors.

Filling:

1  8 oz. pkg. cream cheese

1 10 oz. can sweetened condensed milk

2  t vanilla

1/4 C fresh juice from just-picked limes

1  T grated lime zest

3-4  drops of green food coloring (optional)

Blend ingredients thoroughly, pour into cooled crust and chill or freeze, usually 4 hours or more.  Garnish  with crumbs, whipped cream, ice cream or lime slices (or all of the above!).  Serves 6-8.

 

Chilled Papaya Soup

4-5 Cups pureed fresh papaya

1 C plain or vanilla yogurt

1 T killer bee honey                                     

1 t vanilla

2 T fresh lime juice

1 C gingerale or Sprite

starfruit and/or lime slices for garnish

Blend first five ingredients together and freeze in a wide-mouth container  until partially frozen, usually 2-3 hours.   Just before serving add the soda and shake well.  Serve with the sliced fruit arranged floating on top.  Serves  6.

 

Basic Hot Bananas - these are Nice Bananas!

For each serving:

1 t butter

1 t brown or raw sugar

1 t vanilla

1 oz. liquid, either juice, water or half water/half rum (coconut rum is especially good!)

1/2 t cornstarch

1 large, firm, ripe banana, cut into 1/2" diagonal slices

Optional: shredded coconut, chocolate chips, pecans, Kahlua, ice cream, whipped cream

Over very low heat, melt butter, sugar and vanilla together in a small skillet.  Mix cornstarch into liquids, then stir into the butter mixture.  Increase heat and cook just until slightly thickened.  Add bananas and stir carefully once or twice to coat evenly with sauce and heat through, about 3 minutes- add a little water if sauce is too thick.  DO NOT OVER COOK OR BANANAS WILL BE MUSHY.   Sprinkle with shredded coconut, chocolate chips  or other toppings.
